There&#039;s lots of variations on how to make ceviche and each country in South America has its own method. There really is no need to marinade the fish for 24 hours; as long as the fish has turned opaque, it&#039;s ready to eat. From my understanding, you don&#039;t want to leave the fish in the lime juice for too long as this will impair the flavour and texture. I am aware that in Panama ceviche is sold as you described and it is even exported to the USA (http://cevichepescafina.com/).</description>
